Here are some recipe ideas for when you’re on the go. They stand up well and don’t need to be refrigerated.

Picnic Bean Burrito Recipe

Mix canned pinto beans (drained and rinsed) with cooked brown rice. Place some of the mixture in the center of a whole wheat tortilla, top with grated cheese. Roll it up and wrap in plastic wrap. Put some of our River Guide’s Favorite Salsa in a small lidded container to pour on when eating.

River Guide’s Favorite Salsa Recipe

  • 2 cans black beans (drained and rinsed)
  • 2 cans Mexicorn
  • 1 bottle Italian dressing (we like Wishbone brand Zesty Italian)
  • I can Rotel with cilantro

Mix together and serve with tortilla chips. We must warn you that this salsa is highly addictive!

Fruit & Yogurt Parfait

This simple DIY recipe is way better than the pre-packaged concoctions. Pack a container of plain yogurt, a baggie of granola, and a few half-full reusable containers of your favorite chopped fresh fruit. You can use apples and bananas if you add a little pineapple juice to keep the fruit from turning. At your picnic, the kids can assemble their own parfait by topping the fruit with the yogurt and granola.
